Welcome to week 2 with 80-day obsession!
I try to finish my week with meal prepping for the next week unless I know I will have time to do it on Monday. However I do try to stick to a routine where I cook on Sundays, but some weekends are crazier than others and it’s not always possible. So you have to be flexible 😉 We weren’t too busy this weekend so meal prep wasn’t a challenge.
I usually prepare food for 3 days and then on Wednesday, I make my food for the rest of the week. I feel like preparing food for the whole week makes it not tasting good.
Here are some of the meals I had this week:
Scrambled eggs with mushrooms and spinach on tortilla / Scrambled eggs with tomatoes and sandwich
Breakfast Salad: spinach, egg, turkey bacon, bread, and dressing.
Strawberry yogurt with banana and PB /Raspberry yogurt with mango and chocolate drizzle 🙊
My favorite meal this week! Mini Zucchini Pizzas – sooo good!
Pasta with salsa and sausage.
I used chickpea pasta and Fig & Feta sausage that you can see below.
Ground turkey, cauliflower gnocchi (from Trader Joe’s), spinach and mushroom
On Sunday we went out for lunch. We went to our local Food Truck Festival. So many choices!
We had Sweet and Spicy Shrimps and gluten-free sandwiches – mine was with mozzarella, pesto, and tomato.
