Black Bean Burrito

It’s Burrito time!

For the sauce you can use hummus, salsa or any other dressing you like. I used blended cashews with water and some spices.

You can go with cheese option and use vegan cheese, or you can make it cheese-less and it will still be delicious.

I felt like cheese (it’s so hard to get rid of those cravings for cheese), and decided to try Daiya cheddar cheese. I am not happy with it but not because it wasn’t good. I am not happy with is because it is highly processed food and I know my body would feel much better without it.

But let’s don’t beat ourselves up. Small steps. It doesn’t come overnight.

I have to admit that quitting cheese so far has been the hardest. I had no issues with meat and seafood, I’ve stopped drinking milk long time ago, and can live without eggs, but cheese… is it only me?

Fell free to use any toppings you like, and make changes in the filling. If you don’t like onion, don’t add it, add mushrooms, change cherry tomatoes to sun-dried tomatoes – there is so many options you can choose from!

I had a special helper in my kitchen. Charlie also loves to try new recipes 😉
