Caramelized Banana Pancakes

Breakfast idea that will kill a sweet tooth! Those caramelized bananas are a bomb!

I was inspired by Pancakes from Confessions of a Fit Foodie. With small changes, I created this vegan version. Instead of eggs, I used flaxseed egg and it worked great!

I’ve tried frying the pancakes the way she did but it didn’t work for me. They were sticking to the pan, bananas were burning and it was a mess. I’ve tried batter, banana, pecans, batter version of frying and it worked perfectly!

This recipe will give you 12 pancakes
1 serving = 2 pancakes
1 serving = 1 YELLOW, 1 PURPLE, 1 1/2 spoon

Caramelized Banana Pancakes

Yields6 Servings

 2 eggs
 2 cups almond milk
 2 tbsp melted butter
 4 tsp maple syrup
 1 ½ cups whole wheat flour
 2 tsp baking powder
 1 tsp baking soda
 3 bananas
 12 pecans

Whisk together milk, eggs, melted butter, and maple syrup. In a separate bowl, mix flour, baking soda, baking powder, and salt. Add dry ingredients to the wet ingredients and stir until combined.

Slice the bananas and caramelized them. Heat a pan with 1/4 tsp of coconut oil and fry them on both sides for about 1 min each side.

On a pan melt 1/4 tsp of coconut oil, pour a little less than 1/4 cup of batter. Add 4 slices on banana on the top, sprinkle with chopped pecan, add another 1/4 cup of batter. Fry until golden brown, flip on the other side and fry for few minutes. Follow the same steps until you are out of batter.
