Carrot Cake

You will love this cake for its moist, rich, wholesome flavor and gorgeous color.

Keep it covered at room temperature where it will stay good for a couple of days, or keep it covered in the fridge where it will stay good for up to a week!

This cake says Fall. Warm tea, oversized sweater, cozy blanket and a slice of carrot cake. Can you imagine a more perfect evening than that?

When I think which season is my favorite, I would say Spring.

Everything starts to blossom, days are longer, it gets warmer outside. Finally perfect weather for a dress and light jacket! You can go outside for a walk and enjoy the sunshine on your face. And it’s just in introduction to what’s coming next.

Summer!

How you cannot like Summer?

The weather is just great, days are long, everyone seems to be happier. You spend your days on the beach, by the pool, lake with a book and favorite drink. All the fresh fruits that you can eat!

After 3 months you might feel too tired of hot weather, vacation is over and you are ready for next season.

That’s when Fall is coming to the rescue!

Time when you can change your wardrobe and add fall veggies and fruits to your menu! I love the first cold nights, hot teas and warm blankets.

But when you think about Winter, you think Christmas. And I love Christmas! I am one of those people who go all in. Christmas tree, decorations, ugly sweaters, planning meals months before, baking cookies. We are also working on our own Christmas traditions. I am Polish and my husband is German, so we try to take what we love the most from both traditions and mix them together.

I love everything about Winter! The weather, the sprit in people, gifts and all that craziness!

As you can see it’s hard to choose one favorite season. Each one of them has something beautiful and unique.

Also when you live in California, you don’t get to feel all the seasons. Spring doesn’t really exist, it goes straight to Summer. We don’t really have Winter, as it doesn’t get really cold and doesn’t snow. Our Winter weather is rainy (for a couple of days) and gloomy.

Carrot Cake

Vegan, Plant Based

 2 cups shredded carrot
 2 ¼ cups flour
 3 tsp baking powder
 1 tsp baking soda
 3 tsp cinnamon
 ½ tsp nutmeg
 1 tsp salt
 ½ cup applesauce
 1 cup almond milk
 ½ cup maple syrup
 ½ cup melted coconut oil

Preheat the oven to 350°F and grease a baking pan.

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. In a separate bowl, whisk together the applesauce, almond milk, vanilla, maple syrup and oil.

Mix the dry ingredients into the bowl with the wet ingredients. Fold in the carrots and stir until just combined.

Bake for 30 to 40 minutes or until a toothpick inserted comes out clean. Let cake cool completely before serving.
