Cauliflower Rice [V,GF]

This dish is my newest obsession!

It’s so easy to make and sooo delicious! It also makes a perfect meal for meal prepping. You can easily make a bigger portion for couple of days and store it in a fridge.

It’s up to you how easy or ‘complicated’ this meal will be. You can use store-bought cauliflower rice or make it yourself. I usually make my own unless I don’t have time to do that.

Another choice – beans. You can either use canned beans or dry ones. Lately, I use dry beans only. It takes much longer because you have to first soak them and then cook. But I try to avoid canned food as much as I can. If you have a pressure cooker it will make it a bit easier and faster.

Cauliflower Rice

Yields3 Servings

 1 head cauliflower
 1 cup dry beans
 1 cup mushrooms
 1 cup frozen peas
  cup soy sauce
 sriracha (optional)

To make cauliflower rice:

Wash and thoroughly dry cauliflower, then remove all greens.

If using a box grater, cut the cauliflower into large chunks and use the medium-sized holes. If using a food processor, cut into small pieces and use the grater attachment to grate the cauliflower into "rice."

Cook the beans according to the instructions. I soak mine overnight and cook in Instant Pot for 22 minutes.

Cut the mushrooms and saute with frozen peas until the mushrooms are soft. Add cooked beans. Season with salt and pepper.

Add ready cauliflower rice. Mix all together and saute for about 5 minutes.

Add soy sauce and saute for another 5 minutes.

Serve warm!

I like to add a bit of sriracha to give it a kick 😉
