Creamy Broccoli Soup [V,GF]

Soup season is slowly coming!

I am not a huge fan of soups.

Honestly, I’m not sure why. It’s not like I don’t like them, I just don’t think about them when planning my meals.

But when I actually make them I do enjoy them! At least in most cases 😉

This soup will keep you warm!

You can add a bit of jalapeno to give it an extra kick!

Creamy Broccoli Soup

Yields4 Servings

 1 chopped broccoli
 1 cup chopped carrot
 1 cup chopped potato
 2 cups water
 1 cup almond milk
 2 tsp flour
 2 garlic cloves
 1 bay leaf

Heat oil on a low heat in a medium pan.
Add garlic and sauté for a few seconds or until fragrant. Then add the flour and cook for about 2 min. Continuously stir it to avoid browning.

Slowly add milk and water and ring the soup to a boil.

Add broccoli, grated carrots, potato, bay leaf, salt, and pepper. Cook for about 15 min.
