Fettuccine Alfredo with Tempeh Bacon

A recipe which supposed to be heavy, high in calories and fat.

Surprise, surprise, it doesn’t have to be!

This Fettucine Alfredo is low in cholesterol and fat! It’s also high in proteins – yes, it’s possible without meat crazy huh? 😉

Make sure to add some vegetables with it to get all the nutrients and get a full belly.

Fettuccine Alfredo

Yields4 Servings

 15 oz dry cannellini (white beans) or 1 can
 1 cup water
 ½ cup cashews
 1 pkg. fettuccine pasta
 1 pkg. tempeh
 3 tbsp lemon juice
 1 clove garlic
 salt, pepper, nutmeg, smoked paprika

SOAKING:
If you using dry beans soak them overnight and cook according to instructions on the packaging.
Soak cashews in 1 cup of water overnight.

If you use canned beans you can skip that step, no need for soaking them.
Soak cashews for at least 15 min.

Cook the pasta according to package instructions. Move ready pasta to a pan

Cut the tempeh into small cubes, season with smoked paprika and fry until golden brown.

Blend the cashews with the water they were soaking in. Add beans, lemon juice, garlic, pepper, salt, nutmeg and blend until smooth.

If you feel like the sauce is too thick feel free to add more water.

Pour the sauce over the pasta, add tempeh and cook on low heat for 5 minutes, making sure that all of the pasta is covered in sauce.

Serve with favorite vegetables!
