Green Pea Fritters

We tend to think of them as more of a side dish or something we throw into a dish, last minute.
But green peas are a great source of protein, fibre and other goodness.

They work great as falafel alternative, you can eat them in pita sandwich or go with a healthier option and eat them with salad.

I like to eat them with hummus and baked potatoes or with mediterranean salad.

I look at that picture I can feel the afternoon warmth, coming from the sun, on my face. Somehow that vibrant green color makes me smile, and think girl you are so lucky. You got to live in a beautiful place, have wonderful and loving husband, two .. cats. You got time and ability to stand here now and cook this meal. How lucky you are!

We often forget to appreciate the small things in our life, being so focused on wrong things.

For me once in a while comes a stop time. Time when I’m zoned out from all the problems and responsibilities. Stop time when it’s just now. It’s just me and those fritters.

Green Pea Fritters

Vegan, Plant Based

 2 cups frozen peas
 1 onion
 2 garlic cloves
 1 ½ cups chickpea flour
 1 tsp baking soda
 2 tbsp mixed dried herbs

Preheat the oven to 350F and line a baking tray with baking paper.

Add the peas to a medium saucepan, cover with water and boil, according to packet's instructions and drain well.

On a non stick frying pan sauté the onion and garlic for a few minutes, until softened.

Add the peas, onions and garlic to a food processor and pulse until it becomes a thick paste. Stir in the chickpea flour, bicarbonate of soda, salt and herbs.

The mixture is quite sticky so you will need to wet your hands to shape them into patties. Scoop 1 tbsp of the mixture, roll into a ball and press down slightly to create a patty shape on the baking sheet.

Brush with fritters with coconut oil.

Bake for 15-18 minutes until golden brown, flipping them over half way.

You can eat them with hummus, tomato sauce or vegan tzatziki sauce.
