Mexican Beans

This recipe is for you if you are looking for something extremely quick to make!

It’s easy, it’s healthy and it’s yummy! My original thought for that recipe wasn’t with chickpeas but I ran out other beans so I had to improvise a bit and it actually turned out great.

Mexican Beans

Yields3 Servings

 1 cans black beans
 1 can chickpeas
 2 tbsp tomato paste
 7 oz tomato sauce
 1 onion
 2 tbsp soy sauce
 1 tsp maple syrup
 1 tsp cumin, smoked paprika, dried oregano, chili powder
 ½ tsp cinnamon, nutmeg

Chop the onion and fry until golden. Add all the spices and fry for one more minute.

Strain the beans and rinse with water. Add the beans, tomato paste, tomato sauce, soy sauce and maple syrup to the onion and cook under cover for 20 minutes.

Serve with rice or bread.
