Nut Cake a’la ‘Snickers’

This Raw Nut Cake is so deliciously crunchy and chewy you will want to it eat all at once!

It’s kind of similar in taste to Snickers. Has really similar texture and nutty taste, but it’s much healthier and nutritious.

You can cover the cake with chocolate sauce if you want it to taste even more like Snickers. I made it spontaneously and I didn’t have ingredients for chocolate sauce. It still taste pretty good without it so don’t worry!

This cake will stay fresh in your fridge for quite some time. I made is as a part of meal prep for a week, and by the end of the week it still tasted as good as at the beginning.

Nut Cake a’la ‘Snickers’

Vegan, Gluten Free, Plant Based, Raw Vegan

Base
 1 ½ cups cashews
 ½ cup shredded coconut
 8 dates
 1 tbsp maple syrup
Carmel
 8 dates
 ¼ cup peanut butter
 2 tbsp almond milk
 1 tbsp maple syrup

BASE: In a food processor, process cashews into small pieces.
Add in coconut, dates, and maple syrup and process until a sticky dough forms.

Press into a loaf pan lined with parchment paper and put in the freezer.

CARMEL: Process all ingredients, adding almond milk a little bit at a time until a smooth caramel forms.
Spread caramel over the base.

Place back in the freezer until hardened.
Remove from the freezer, cut into bars.
