Raw Kale Pesto Pasta

I love zucchini noodles! They are a great substitute for pasta. I like to eat them when I feel like eating something lighter than regular pasta. They taste great with sun-dried tomato sauce, tomato sauce or with kale pesto sauce.

Pesto sauce tastes great with fresh cherry tomatoes so I really recommend adding these!

If you don’t want to eat it raw/cold you can warm it up, the choice is yours 🙂

To make zucchini noodles I used spiralizer with angel blade (if I remember correctly
). If you want to know which spiralizer I use I shared it in this post.

Raw Kale Pesto Pasta

Yields1 Serving

 23 zucchini
 10 cherry tomatoes
 3 cups kale
 2 cloves garlic
 ½ lemon (juice)
  cup flaxseed oil
 ¼ cup pumpkin seeds
 23 tbsp water

In a food processor, add all ingredients. Process on high until the pesto reaches the desired consistency.

Prepare zucchini noodles using a spiralizer.

Combine the pesto with zucchini noodles. Add fresh cherry tomatoes.
