Raw Lasagne

Another delicious recipe for next week #RawTuesday! First week of #RawTuesday with full menu and recipes available here

This time on a plate – Lasagne! Because everyone loves lasagne!

After eating this version you won’t feel bloated, too full and guilty. It’s light, healthy but also filling.

All you need is zucchini and tomatoes, cashews, water and the spices you like.

You can add more if you wish. I think I will try the next version with fresh spinach and some ‘meat’ (maybe walnuts?) 🤔 Do you think it will be a good combination? Or maybe you have different ideas, let me know!

For more cheesy taste, use more nutritional yeast. I personally love my pasta cheesy!
The cheese layer gives you the creamy texture which blends perfectly with the crispiness of the zucchini.

You can arrange the layers however you want. I did zucchini, cheese, tomatoes, zucchini.

This is a very basic lasagne recipe. I am so excited to take it to the next level and come up with even more delicious recipe!

Raw Lasagne
Vegan, Gluten Free, Plant Based, Raw

 3 medium size zucchini
 5 tomaotoes
 ½ cup cashews
 ¼ cup nutritional yeast (optional)
 1 tsp paprika

Cut zucchini into thin slices, I don't have a suitable machine for that. I used a knife and tried my best 😉 Will probably consider getting something that will do a better job.

Sprinkle the zucchini with salt and leave it overnight or for couple of hours. It will loose water, drain off the water. And season with favorite spaces.

To make tomato sauce: Blend tomatoes with favorite spaces.
* you can add one date if you like it more sweet.
To make cheese sauce: Blend cashews with water and nutritional yeast.

Arrange layers: zucchini, tomato sauce, cheese sauce, zucchini. Sprinkle with more yeast.
