On today’s plate – Delicious, Raw Vegan Salad with Beet Dressing!
Simple in preparation yet complex in nutrition salad. Toss in your favorite greens and toppings. I used spinach, cherry tomatoes, cucumber, red onion, bean sprouts and broccoli sprouts, all of it drizzled with beet dressing.
This salad was made for one of my #RawTuesaday
What do you need:
- 1/2 cucumber
- 1/2 red onion
- handful favorite sprouts
- handful cherry tomatoes
- mixed greens of your choice (like spinach, arugula)
- one really ripe chopped beet
- juice from one lemon
- 1/2 cup water
You can add more or less water, depending on how thick you want the dressing to be.

What is 8 week detox about?
It’s a detox and introduction to eating raw for longer period of time. Divided in 3 phases – Phase 1 (two weeks) which is explained below; Phase 2 – where you are 100% raw; and Phase 3 – you eat 80% raw, gradually introduce 20% cooked food.
If you follow my blog you might now that I started experimenting with raw food some time ago. I started #RawTuesday and I went fully raw once a week. Now I feel that I am ready for next step. I don’t feel ready to go 100% raw, but I think 80/20 is a perfect combination for me right now. I believe it will let me to keep the perfect balance between eating raw food and cravings for cooked food.
