Red Lentil Spaghetti

The fact how much I love pasta (especially spaghetti) is well known, at least to those of you who follow my blog since a while.

I love to try new ideas on how to make it.

I made Raw Vegan Spaghetti which is a light version of spaghetti bolognese. Pasta is substituted with zucchini noodles – if you haven’t tried zucchini noodles now might be the time! You can eat it raw or warm it up.

Vegan Spaghetti Bolognese – made with green lentils and dried mushrooms which makes it really rich in taste.

And last but not least Halloween Spaghetti that looks spooky and will make a perfect dish for your Halloween party.

Today we have another version, using red lentils and nutritional yeast for the cheesy kick!

Red Lentil Spaghetti

Yields5 Servings

 pasta
 2 cups red lentils
 2 cups water
 15 oz tomato sauce
 2 cans diced tomatoes
 6 oz tomato paste
 2 tbsp olive oil
 1 diced onion
 1 chopped stalk celery
 3 chopped carrots
 3 cloves garlic
 2 tbsp dried oregano
 2 tbsp dried basil
 2 tbsp nutritional yeast

Heat olive oil in a large skillet. Add onion, celery, and carrot. Cook, stirring as needed, until softened, about 5-10 minutes.

Add garlic, and cook, stirring frequently, for 30 seconds. Stir in tomato paste, and cook, stirring it in, for 1 minute.

Add tomato sauce, diced tomatoes with juice, basil, oregano, baking soda, and salt and pepper to taste.
Stir in lentils and water.
Simmer, stirring regularly, until lentils have softened, about 20-30 minutes.

In the meantime cook the pasta according to the instructions on the packaging.

Use nutritional yeast to sprinkle your ready meal to give it a cheesy kick!
