Thai Salad

One of my favorite dishes!

I love peanuts in sauces, pasta, and salads. Every dish taste better with a bit nuts in it 😉

This salad has a really similar taste to Pad Thai but it’s easier and faster to make. Especially if you get ready salad mix and peanut sauce, it takes 10 minutes to prepare and it’s perfect for meal preps!

Thai Salad

*use GF soy sauce

Yields3 Servings

 thai mix salad*
 1 bell pepper
 6 oz rice noodles
 ¾ cup thai peanut sauce
 ½ cup cashews
SAUCE
 1 inch ginger
 1 garlic clove
 ¼ cup peanut butter
 ¼ cup fresh orange juice
 3 tbsp lime juice
 2 tbsp soy sauce
 3 tbsp maple syrup
 3 tsp sesame oil
 ½ tsp cayenne

Cook the rice noodles according to the instructions on the packaging.

Cut the bell pepper into thin slices.

On a pan mix one serving of noodles (2 oz) with 2 tbsp of peanut sauce and fry for about 5 minutes, until noodles are covered with sauce and bell pepper is softer.

Arrange in a bowl mix salad, noodles, remaining peanut sauce and top with roasted cashews.

* You can make your own Thai mix, use shredded: cabbage, carrot, radish etc. I wanted to save some time that's why I bought a ready one.

* You can use store-bought sauce or make your own. To make your own blend all the ingredients on the left together.
