Vegan Halloween!

BOO!

Are you guys ready for Halloween? I am totally ready! 😉

Today I want to share with you few vegan recipes that you can use for Halloween party or just treat yourself in Halloween spirit.

Let’s start with Spooky Pancakes for Breakfast.

Spooky Pancakes

– 1 cup flour (your choice)
– 2 tbsp cornstarch
– 1 tsp baking powder
– 3 tbsp maple syrup / blue agave
– 1 tsp apple cider vinegar
– 1 cup plant milk
– 2 tbsp melted cacao butter / vegetable oil
– 1 tsp activate charcoal (for black color)

Heat a dry frying pan on a low heat. I used a non-stick pan, if you use a regular pan you might need to add a small amount of oil.
Mix the dry ingredients together in a large bowl.
Stir in the wet ingredients until well combined.
Ladle approximately 1/4 cup of the batter onto the dry pan and cook for about 1 min (or when bubbles start to form on top), carefully flip onto the other side. Cook for another minute or so.

Top with your favorite fruits, maple syrup or whatever else you want!

Now it’s time for something less sweet and even more scary! Stuffed Peppers that are an awesome lunch idea or party treat!

Creepy Peppers

– 6 bell peppers
– 1 cup vegetable broth
– 1 cup millet or quinoa
– 1 can black beans
– 1 zucchini
– mushrooms

Preheat oven to 350F. Cut tops off of peppers like you would a jack-o-lantern, remove seeds, and wash thoroughly. Place in an oven safe dish arranged upright and bake for 30 minutes.
In the meantime cook millet/quinoa following the instructions on the package. Once the millet/quinoa is ready move it ti frying pan fry with chopped mushrooms, zucchini, drained black beans and vegetable broth.
When peppers are ready, remove from oven and fill with stuffing and bake for an extra 30-40 minutes until peppers are soft.

Who doesn’t like spaghetti?

I think I don’t know a single person who does not like it. There is so many versions and variations to make this dish that everyone will find the one that taste the best for them. I made it myslef in few different version it’s beacuse I love it! I made Vegan Spaghetti Bolognese and Raw Spaghetti , and today Bloody Spaghetti – Halloween version.

Bloody Spaghetti

– black bean spaghetti pasta
– tomato paste
– 1 can diced tomatoes / 5 fresh tomatoes
– 2 tomatoes
– avocado
– salt, pepper, paprika

Boil the pasta according to the instructions on package. To make sauce cut 2 tomatoes and blend them until smooth, add 2 tbsp tomato paste and blend again. Move the sauce the a pan and simmer on a low heat for 5 minutes. Add diced tomatoes (you can use canned tomatoes or fresh ones), and spices, combine together and simmer for 10-15 minutes.
Cover the pasta with tomato sauce and add some mashed avocado on the top.
