White Bean & Kale Soup

I am not a huge fan of soups but oh boy this one is good!

It’s a perfect light meal for lunch or even dinner. It was actually my first time trying kale in a soup and I have to say I love it! I wasn’t sure how will it taste and if it won’t ruin the whole dish but it actually fits perfectly!

So if you are not a huge fan of kale, or at least you think you are not, give this recipe a try and you might change your mind.

Not kidding.

White Bean & Kale Soup

Yields4 Servings

 4 oz vegetable broth
 2 cups water
 1 onion
 3 garlic cloves
 1 sweet potato
 1 russet potato
 5 cups kale
 2 bay leaves
 2 cups cooked white beans
 1 tsp white miso paste
 2 tbsp nutritional yeast
 1 tsp dried oregano

Soak beans overnight and cook them according to the instructions on the packaging, you can also use canned beans.

Heat 1 cup of broth, add chopped onion and minced garlic. Saute for 5 minutes.

Add cut in cubes potatoes, bay leaves, and remaining broth and water. Cook until potatoes are soft.

Add beans, kale, miso, oregano, nutritional yeast, salt, and pepper. Cook for 10 more minutes.
