Zucchini Ravioli [GF]

A lighter and quicker version of traditional ravioli recipe. All together should take about 20 min.

To cut the zucchini I used a mandoline. If you don’t have one yet I highly recommend buying one. It will make your life so much easier. Especially if you eat lots of salads or like to make potato chips by yourself. In this blog post, I shared the one I use if you are interested.

Zucchini Ravioli

Yields1 Serving

 ½ zucchini
 ½ cup part-skim ricotta cheese
 113 g tomato sauce
 ¼ cup part skim mozarella
 1 cup cooked broccoli
 4 oz ground turkey
 100 g mushrooms

Preheat the oven to 425F.

Start with cutting the zucchini lengthwise into thin slices.

The next step is to make the filling. For that, you will use ground turkey and mushrooms. It is a good idea to cut the mushrooms into really small cubes, you can use a food processor for that. I prefer to do it with a knife because it's too much cleaning with the processor 😀
First fry the meat, add some spices - pepper, salt, paprika. Add mushrooms and fry until they are soft. Add the tomato sauce and mix it all together. Turn off the heat.

Now it's time to make the ravioli! Take two slices of zucchini and on a flat surface (I used a plate), lay them so that they overlap lengthwise. Spoon about 1 tablespoon of filling in the center of the zucchini. Bring the ends of the strips together to fold over the center, working one side at a time.

Ready ravioli place in a baking dish, sprinkle with mozzarella and bake for about 10 min.

You can serve it just like this or add some more veggies to it.
